MEXICAN CHILLI

Serves 10

INGREDIENTS

Olive oil

50g crushed garlic

1kg of mixed vegetables (capsicum, zucchini, corn)

1kg 100% NOT Beef

1.2kg drained red kidney beans

1.5L Leggo’s Napoli Sauce

500ml vegetable stock

300ml Chipotle BBQ Sauce

1 finely chopped chilli

10g paprika

5g salt

100g dairy-free dark chocolate


METHOD

1.Sauté garlic and vegetables.

2.Add 100% NOT Beef, red kidney beans, Leggo’s Napoli Sauce and vegetable stock. Cook for 5 minutes.

3.Add Chipotle BBQ Sauce, chilli, paprika and salt. Bring to boil.

Add chocolate. Simmer for 5 minutes.

TASTY TIP

Serve with tortillas and guacamole.
