Vegetarian-Vegan-Aussie-Sandwich-Recipe.

Serves 10

INGREDIENTS

100ml vegetable oil

500g 100% NOT Beef

250g sliced red onion

500g flat mushrooms

7g chopped rosemary

50g seeded mustard

250g vegan mayonnaise

20 slices sourdough bread, toasted

50g sorrel leaves or rocket


METHOD

1.Heat 50ml oil in frypan and cook 100% NOT Beef until browned. Remove and set aside.

2.Cook onions and mushrooms in remaining oil until mushrooms are browned, add rosemary and season well.

3.Combine mustard and vegan mayonnaise. Spread on one slice of toasted bread.

Top with mushrooms, onions, 100% NOT Beef, lettuce and final slice of bread.

TASTY TIP

Make your own vegan mayo by blending aquafaba, olive oil, mustard and vinegar.

100% NOT Beef can be substituted with 100% NOT Chicken.
